Whenever we have sweet potatoes in the house, we just boil them (with the skin) in a pan until they become a little soft. They are ready to eat. We just removed the skin and dab it in sugar. That's it.
We haven't yet tried to make soup out of sweet potatoes. It will be a first for us with this recipe.
